T-Bone's Best Bark

I had the day off yesterday, so I put two small shoulders on at 8am for sandwiches later that evening. Each time I turned my little buddies to ensure even cooking on my weber, I sprinkled on a little more rub. The end result was an awesome, crispy bark. As you can see, my blackest bad boys yet.

When my daughter saw the unveiling after about a 2 hour rest, she thought I had burned and ruined them. But once she tasted a piece, she was ready to suck on the twine that contained these boneless boston butts.

    Nice looking bark you got there T-Bone!

    That's pretty funny considering that I am off this week and put two shoudlers on yesterday as well! Mine are for my fantasy football draft in two weeks. I pulled, vacuum sealed, and froze them.

    Sorry, no pics. But from the pictures, it looks like yours were a little bit darker *cough* BURNT *cough* than mine were. LOL

    I also put on 2 shoulders on Sunday- two beautiful 8 lb shoulders. Cooked up extremely nice. I'm using my thermometer much more, and got them both to 180+ internal temp. I had trouble bringing them off the smoker- they fell apart- absolutely wonderful.

    Used my modified Magic Dust (substitute Peace Climb for cayenne).

    Was having trouble with my Royal Oak- small bits, so quick flames with no lasting heat. Going back to my mix method (lit charcoal briquettes poured on unlit lump). Its called "WWJBWD" (what would Joe-Be-Wan do).

    Wait a minute, Joe-Be-Wan! Did you say "modified?" As in, you didn't follow a recipe to the letter? As in, you "T-Boned it?" As in, you improved upon it?

    No pictures Andakin? I liked the Bark Off idea. By the way, T-Bone's pork was not burnt at all. This was likely the best batch we've had. The meat was very juicy and had lots of smoke flavor. I have to admit, the pictures do make it look overcooked; however, it wasn't at all. Also, it seemed like we got more meat by letting it rest longer than usual.

    Way to pull a T-Bone with the Magic Dust joe-be-wan! T-Bone actually pulled a T-Bone with this latest batch as well. He combined a couple different rubs which I don't recall him disclosing.

    Overall, the pork was great with lots of left overs for our vacation.
