JED's Rub

After getting multiple requests for the recipe for Jed's rub, I thought I'd post it. It is for general use on pork, but friends have reported it goes well on chicken and even beef. I just got another shipment of 13 cups from the Spice House in Tosa- cost about $43 for the 13 cups, which should last a while.

3 cups kosher salt
2 cups Peace Climb Chili Powder
1 cup hungarian sweet paprika
1/2 cup each of the following:
Coarse black pepper
Lemon-pepper
Mustard powder (regular)
White sugar (brown sugar will cake)
Granulated onion
Granulated garlic
Cumin
Hickory Salt
Ginger
1/4 cup Cayenne (optional)

This is slightly changed from Ed and mine orignial, but I like this better. Mix well and enjoy.

    I gave the gift of pork to my parents and siblings this Christmas. Every weekend since Thanksgiving, I smoked a couple of shoulders to pull and freeze (No easy task since in Dec we've gotten about 23 inches of snow). Last week, I made all 3 of my perfected sauces to distribute on the holiday. A big hit.

    I also brought a slowcooker full of pulled pork for the Pediatric Pot luck on the 20th. One comment, "I think your pork could give Joe-Be-Wan's a run for his money." Rematch!! Rematch!!

    I got a few BBQ related items for X-mas. I got the Weber rib rack (yes Joe-Be-Wan I know, the Raichlen rack is better). And I also got a Penzeys Steak Seasoning gift set which has the Bicentenial Rub that Joe-Be-Wan raves about. It includes all of the rubs below:

    Cajun Seasoning

    Ha Ha. I believe it was Kathy D. who has tried both and made the comment. But I got raves all around.

    I too got BBQ love in my stocking. Santa gave me an electronic thermometer like Andakin was sporting at BBQ school. That way I don't have to check the temp by opening the lid to my weber. Because, as we all know, "If you're lookin', you ain't cookin'."

    My BBQ treat, that I didn't give myself, was doing a 10 lbs. standing rib roast on my dad's big green egg. Those things are amazing- gonna have to get one some day.

    Kathy D said that? Did she say it while putting ketchup on her Q?

    Heading to the beach to see my brother tomorrow- planning a detour through Wilson NC to try one of the joints featured in Peace, Love, and BBQ. There is another place in Goldsboro, NC, but that guy forged some stuff and is in jail now- NOW THAT IS AUTHENTIC BBQ!
