Peel & Eat Shrimp
Okay, so this is not a smoking post...
Over the Easter Holiday I was at my folk's house in NW Indiana and my Dad showed Mrs. T and I how to make Peel & Eat Shrimp. I hadn't had this dish in a couple of decades. I first recall my dad preparing this meal on his hibachi as a kid in Southern California. When we moved to the Midwest, good shrimp was harder to come by and more expensive, so it was a rare treat. Now that frozen bags of large, deveined uncooked shrimp in the shell are readily available, Mrs. T was all over trying it ourselves yesterday.
A few days ago we bought a large bag of shrimp for about $20. A few hours before grill time we put the shrimp in a large bowl of cool water to thaw. When they were pretty thawed out, the shrimp were tossed with kosher salt, parsley, and melted butter with garlic. Direct heat for about 2 minutes a side is all there is to it. We served our shrimp with artichokes and roasted potatoes. A great meal.
